Corned Beef & Cabbage
with Warm Horseradish Sauce

[Grandma Shanahan’s favorite] 

     Start with a raw corned beef brisket, in cryovac, weighing about 12 pounds. We are going to roast the brisket overnight in our Cadco Convection Oven, IN THE CRYOVAC! ...and you thought serving great corned beef was going to be difficult. While you are home in bed your Cadco oven will be working for you [at less than $.03 per hour].

     Place your corned beef [in the cryovac] in a 12”x20”x2 ˝” size steam table pan, and cover with film and foil, so if the cryovac breaks you don't have a big mess to clean up. We will roast this at 250f. degrees for 4 hours and then hold at 160f. degrees overnight. Be sure to set your dial to the infinite time setting for the hold cycle. This allows the corned beef to gently roast in its own juices and it assures you a flavorful, tender, moist, and delicious roast the next day.

     We have one more simple step before you slice and serve your corned beef. Since a beef brisket is for the most part two pieces of meat held together by a layer of fat, we will need to "firm" it up for easier slicing. Remove the roast from the cryovac, place it on a cooking rack, in a sheet pan, and raise the oven temperature to 350f. degrees. Season the fat side of the roast with any seasoning of your choice, and roast for another 30 minutes. Now you are ready to slice and serve the most delicious corned beef and cabbage dinner imaginable.....

HEY!!! We're not done yet, we've still got all the fixin's to make!!

     Mix the leftover corned beef brine with equal parts boiling water, pour it over the cabbage, carrots, potatoes ["B" size redskins], and onions/leeks. Cover with plastic film then foil [ yes, both] and bake at 250f. in the Cadco Convection Oven for 1 hour or until all the vegetables are done. Serve with a little of the "Jus" poured over the top and dust with parsley.

Try some Warm Horseradish Sauce with it.  Its great!!

1 quart cream sauce
1/2 cup horseradish [to taste]
2T. finely chopped parsley
Salt and pepper to taste

 Squeeze the moisture out of the horseradish [this removes a lot of the fire from it, but not the flavor] and combine with all the remaining ingredients. Serve warm, on the side.
